Mocktail Recipe: Bee’s Knees

Description
The Bee’s Knees is a Prohibition-era cocktail that used honey to mask the smell of the homemade “bathtub gin” used when alcohol was illegal to purchase. In this version, some of the piney aromas associated with gin were intentionally retained. Incorporating juniper berries and a gin alternative helps capture the essence of the original, but without any alcohol.
Ingredients
Serves 1
- 1.5oz gin alternative
- Tested with Ritual Zero-Proof Gin
- 0.75oz lemon juice
- 0.75oz honey syrup
- 7 dried juniper berries
Steps
- Place drink glass (ideally a Nick & Nora glass or a coupe glass) in the freezer to chill as you prepare the drink
- Note: This step helps the drink stay cooler for longer as the final drink doesn’t contain ice
- Add gin alternative, lemon juice, honey syrup, and berries to cocktail shaker
- If desired, lightly muddle the berries
- Add large ice cubes to the shaker and cover
- Shake vigorously for 10-12 seconds
- Using a fine mesh strainer, double-strain mixture into the chilled glass
