Overnight Sourdough Pancakes
Notes
- I followed the recipe from the For the Love of Sourdough book, only I had to figure out and measure the weight of the various ingredients as I went
- The book has it all in cups instead of grams
- The pancakes turned out well, though the sourdough flavor was definitely very present (which I like)
- The kids liked one serving (and even asked for them the next morning), but didn’t like eating them past that
- This process of baking with my discard, and seeing the outcome, makes me think that I need to consider changing how I maintain my sourdough starter:
- I’m going to adopt a purely white-flour-based starter maintenance method
- I’ll also experiment with a per-bake leavening creation process that will (hopefully) allow me to still create very strong, sour leavening for the loaves or bakes that I want it
- But for those that I don’t, I can have a more mild starter / discard
