Sourdough Discard Banana Muffins Recipe
From the For the Love of Sourdough book.
Ingredients
- 185g White Kamut Flour
- 7g baking soda
- 1g salt
- 1g cinnamon
- 3 ripe bananas
- 160g brown sugar
- 2 eggs
- 1 Tbsp oil
- 140g white sourdough discard
- 7g vanilla
Steps
- Preheat oven to 350ºF
- Mix dry ingredients in a bowl and set aside
- In a larger bowl, mash bananas, then blend in sugar, eggs, oil, discard, and vanilla
- Hand-mix the dry ingredients into the blended ingredients until well mixed
- Grease a 12 muffin pan and divide batter between the tins
- Bake for 20-25mins
Notes
- If you only have 2 bananas, consider compensating on the wet ingredients side with additional oil to offset the lack of wet banana
